做法:春笋切成片后加少许盐捞(lāo )出后用清水浸(jìn )泡,生姜切片,葱切成段。锅烧(shāo )热,倒入2勺油,放入生姜、春笋、牛肉片(piàn )、葱段翻炒1分(fèn )钟左右。再加入生抽(chōu )、老抽、蚝(háo )油翻炒(chǎo )均匀,加入少(shǎo )量清水半掩住(zhù )春笋,盖上(shàng )锅盖大火煮开(kāi )后转中火。煮到水(shuǐ )快熬干的时候加(jiā )入盐(yán ),翻炒均匀稍收汁(zhī )时(shí )盖(gài )上锅(guō )盖焖。
