做法:春笋(sǔn )切成片后加少(shǎo )许盐(yán )捞(lāo )出后用清水浸泡,生姜切片,葱切成段。锅烧热,倒(dǎo )入2勺油,放入(rù )生姜、春(chūn )笋、牛肉片、葱段翻炒1分钟左右。再加入生(shēng )抽、老抽(chōu )、蚝油翻(fān )炒均匀,加入(rù )少量(liàng )清水半掩(yǎn )住春(chūn )笋,盖上(shàng )锅盖大火煮开后转中火。煮到水快熬干(gàn )的时候(hòu )加入盐,翻炒均匀稍(shāo )收汁时盖上锅盖(gài )焖。
