做法:洗净宰好鲫鱼,洗净(jìng )淮山(shān )和薏(yì )米。用清水(shuǐ )把陈皮泡软,拍(pāi )裂一小块姜,热锅,用(yòng )姜(jiāng )块在锅上擦一遍,放两勺油,待(dài )油六成热下鱼,煎至微黄。煮沸瓦(wǎ )煲里的清水(shuǐ ),放入煎煮好的(de )鲫鱼和其(qí )他(tā )材(cái )料,武火煮(zhǔ )沸,转中小火(huǒ )煲一个半小时,下盐调味即可(kě )品尝。
