做(zuò )法(fǎ ):春笋切成片(piàn )后加(jiā )少许盐捞出后用(yòng )清水(shuǐ )浸泡,生姜切片,葱切(qiē )成段。锅烧(shāo )热,倒(dǎo )入2勺(sháo )油,放入生姜(jiāng )、春笋、牛肉片、葱段翻(fān )炒1分钟(zhōng )左右。再加(jiā )入生抽、老抽、蚝油翻炒均匀,加入(rù )少量清水半掩住春笋,盖上锅盖大火煮开后转中火(huǒ )。煮到水快熬干的时(shí )候加入(rù )盐,翻炒均匀(yún )稍收汁时盖上锅盖焖。
