做法:洗净宰好(hǎo )鲫(jì )鱼,洗净(jìng )淮山(shān )和薏米。用清水把陈皮泡软,拍裂一小块姜,热锅,用(yòng )姜块在锅上擦(cā )一(yī )遍,放两勺(sháo )油,待油六成热下鱼,煎(jiān )至微黄。煮沸瓦煲里(lǐ )的清水(shuǐ ),放入煎煮好的鲫鱼和其他材料,武火煮沸,转中(zhōng )小火煲一个(gè )半小时(shí ),下盐调味即可品尝(cháng )。
