做法:春笋切成片后加(jiā )少许盐(yán )捞出后用清水浸泡,生(shēng )姜切片,葱切成段(duàn )。锅烧热,倒入2勺油(yóu ),放入(rù )生姜(jiāng )、春笋、牛(niú )肉片、葱段(duàn )翻炒1分钟左右。再(zài )加入生抽、老抽、蚝油翻(fān )炒均匀,加入少量(liàng )清水半(bàn )掩住(zhù )春笋,盖上锅(guō )盖大火煮开后转中火。煮到(dào )水快熬干的时候加(jiā )入盐,翻炒均匀稍收汁时盖上锅盖焖。
