做法:春笋切成(chéng )片后加少许盐(yán )捞出后用清水浸(jìn )泡,生姜切片,葱切成段。锅烧热(rè ),倒(dǎo )入2勺油,放入生姜、春笋、牛肉片(piàn )、葱段翻炒1分钟(zhōng )左右。再加入生抽、老抽、蚝油翻炒(chǎo )均(jun1 )匀,加入少(shǎo )量清水半掩住(zhù )春笋(sǔn ),盖(gài )上锅盖大火煮开后转中火。煮到水(shuǐ )快熬干的时候加入盐,翻炒均匀稍收汁时盖上(shàng )锅(guō )盖焖(mèn )。
