做法:春笋切成片后加少许(xǔ )盐捞出后(hòu )用(yòng )清水浸泡,生姜切片,葱切成段(duàn )。锅烧热,倒入2勺(sháo )油,放入生姜、春笋、牛肉片、葱段翻(fān )炒1分钟左右。再加入生(shēng )抽(chōu )、老(lǎo )抽、蚝油翻(fān )炒均匀,加(jiā )入(rù )少量清水半(bàn )掩住春笋,盖上(shàng )锅盖大火煮开后转中(zhōng )火。煮到水快(kuài )熬干的时候加(jiā )入盐,翻炒(chǎo )均匀稍收(shōu )汁时盖上锅盖(gài )焖。
