做法:春笋切(qiē )成(chéng )片后(hòu )加少许盐捞出后用(yòng )清水浸泡,生姜切片,葱切成(chéng )段。锅烧热(rè ),倒入2勺油,放入生姜(jiāng )、春(chūn )笋、牛肉(ròu )片、葱段翻炒1分(fèn )钟左右(yòu )。再加入生抽、老抽、蚝油翻炒均匀,加入少量清水(shuǐ )半掩住春笋,盖上锅盖(gài )大火煮开(kāi )后转(zhuǎn )中火。煮到水快熬干的时(shí )候加入盐,翻炒均匀稍收汁(zhī )时盖(gài )上(shàng )锅盖焖。
