做法:春笋切成(chéng )片后加少许盐捞出后用清(qīng )水(shuǐ )浸泡,生(shēng )姜切片,葱切成(chéng )段。锅烧(shāo )热,倒入2勺油(yóu ),放(fàng )入生姜、春笋、牛(niú )肉片、葱段翻炒1分钟左右。再加(jiā )入生抽、老抽(chōu )、蚝(háo )油翻炒均匀(yún ),加入少量清(qīng )水半掩(yǎn )住春笋,盖上锅盖大火煮开后转中火。煮到水(shuǐ )快熬干的时候(hòu )加入(rù )盐,翻炒均匀稍收汁时盖上锅盖焖。
