做(zuò )法:洗净(jìng )宰好鲫鱼,洗(xǐ )净淮(huái )山和薏(yì )米。用清(qīng )水把陈皮泡软,拍裂一小块姜,热锅,用姜(jiāng )块在锅上擦一遍,放(fàng )两勺油,待油六成热下鱼,煎(jiān )至微(wēi )黄(huáng )。煮沸瓦煲(bāo )里的清水,放入煎煮好的鲫鱼和其(qí )他材料,武火煮沸,转中(zhōng )小火煲一个半小时,下盐(yán )调味即(jí )可品尝。
