做法:春笋切成片(piàn )后加少许(xǔ )盐捞出后用清水浸泡,生姜切片(piàn ),葱(cōng )切成(chéng )段。锅烧热,倒入2勺油,放入生姜、春笋(sǔn )、牛肉片、葱段翻(fān )炒1分钟左(zuǒ )右(yòu )。再加入生抽、老抽、蚝油翻炒均匀,加入少量清水(shuǐ )半掩(yǎn )住春笋,盖上锅盖大(dà )火煮开后转中火。煮到水快熬干(gàn )的时(shí )候加(jiā )入盐,翻炒均匀稍收汁时盖(gài )上锅(guō )盖焖。
