做法:春(chūn )笋(sǔn )切成片后加少许(xǔ )盐捞出后(hòu )用清水浸(jìn )泡,生姜切(qiē )片,葱切成段(duàn )。锅(guō )烧热,倒入2勺油,放入生姜、春笋、牛肉片(piàn )、葱段翻炒1分钟左(zuǒ )右。再加(jiā )入生抽、老抽、蚝油翻(fān )炒均匀,加入(rù )少(shǎo )量清水半掩住春笋(sǔn ),盖上(shàng )锅盖大火煮开后转中(zhōng )火。煮(zhǔ )到水快熬干的时(shí )候加入盐,翻炒均匀稍收汁时盖上(shàng )锅盖焖。
