做法(fǎ ):春笋切成片后加少许(xǔ )盐捞(lāo )出后用清水浸泡,生姜切片,葱(cōng )切(qiē )成段(duàn )。锅烧热(rè ),倒入2勺油,放入生姜(jiāng )、春(chūn )笋、牛肉片、葱(cōng )段翻炒1分钟左右。再(zài )加入生(shēng )抽、老抽、蚝油翻炒均匀,加入少量(liàng )清水半掩住春(chūn )笋,盖上(shàng )锅盖大(dà )火煮开后转(zhuǎn )中火。煮到(dào )水快熬干的时候(hòu )加入盐,翻炒均匀稍收汁时盖上锅盖焖。
