做(zuò )法:春(chūn )笋切成片后加少(shǎo )许盐捞出后用清水浸泡,生姜切片,葱切成段(duàn )。锅烧热,倒(dǎo )入2勺油,放(fàng )入(rù )生姜、春笋、牛肉片、葱段翻炒1分(fèn )钟左右。再(zài )加入生抽、老抽(chōu )、蚝油(yóu )翻(fān )炒均(jun1 )匀,加入(rù )少量清水半掩住春笋(sǔn ),盖上锅盖大火煮(zhǔ )开(kāi )后(hòu )转中火。煮到(dào )水快熬干的时候加入盐,翻炒均匀稍收汁时盖上锅盖焖。
