做(zuò )法:春笋切成片(piàn )后(hòu )加少许盐捞出后用(yòng )清水浸泡(pào ),生姜切片,葱切成段。锅烧热(rè ),倒入(rù )2勺油,放(fàng )入生姜、春笋、牛肉片、葱段翻(fān )炒1分钟左右。再加(jiā )入生抽、老抽、蚝油翻炒均匀,加入少量清水半掩住春(chūn )笋,盖上锅(guō )盖大(dà )火煮开后转中火(huǒ )。煮到水快熬干的时候加(jiā )入盐,翻(fān )炒均匀稍收汁(zhī )时(shí )盖上锅(guō )盖焖。
