做法:洗净宰好鲫鱼,洗净淮山和(hé )薏米。用清水(shuǐ )把陈(chén )皮泡软(ruǎn ),拍裂一小块(kuài )姜,热锅(guō ),用姜块在(zài )锅(guō )上擦一(yī )遍,放(fàng )两勺(sháo )油,待(dài )油六成热下鱼,煎至微黄。煮(zhǔ )沸瓦煲里的清水(shuǐ ),放入煎煮好的鲫鱼和其他材料,武火煮沸,转中小(xiǎo )火煲一(yī )个半小时,下盐调(diào )味(wèi )即可品尝。
