做(zuò )法:春笋切成片后加少许盐捞(lāo )出(chū )后用清(qīng )水浸泡,生姜切片,葱切(qiē )成段。锅烧热,倒入2勺油,放入(rù )生姜、春笋、牛肉片、葱段翻炒1分钟左右。再加入生(shēng )抽、老抽、蚝(háo )油翻炒均匀,加入少量(liàng )清水半掩住春笋,盖上(shàng )锅(guō )盖大火煮开后转(zhuǎn )中火。煮(zhǔ )到(dào )水(shuǐ )快熬干的时候加(jiā )入盐,翻(fān )炒均(jun1 )匀稍收汁时盖上锅盖(gài )焖。
