做法:洗净宰好鲫鱼,洗净淮(huái )山和(hé )薏米。用清水把陈(chén )皮泡软,拍裂一小块姜(jiāng ),热锅,用姜块在锅上擦一遍,放两(liǎng )勺油,待油六成热下(xià )鱼,煎至微黄(huáng )。煮(zhǔ )沸瓦(wǎ )煲里的清水,放入(rù )煎煮好(hǎo )的鲫鱼和(hé )其(qí )他材(cái )料,武火煮(zhǔ )沸,转中小火煲一个半小时,下盐调味即可品尝。
