做法:春笋切成片后加少许盐捞出后用清水浸(jìn )泡,生姜切片,葱切成段。锅烧热,倒入2勺油(yóu ),放入生姜、春笋(sǔn )、牛肉片(piàn )、葱段翻炒1分钟左右。再(zài )加(jiā )入(rù )生抽、老抽、蚝油翻炒(chǎo )均匀,加入少量(liàng )清水半掩住春笋,盖上锅(guō )盖大火煮开后转中火。煮到(dào )水(shuǐ )快熬(áo )干的时候加入盐(yán ),翻(fān )炒(chǎo )均匀(yún )稍收汁时盖上锅(guō )盖焖。
