做法:春(chūn )笋切(qiē )成片后加少许盐捞(lāo )出后用清水浸泡(pào ),生姜切片,葱切成段。锅烧热,倒入(rù )2勺油,放入(rù )生姜(jiāng )、春笋(sǔn )、牛肉片、葱(cōng )段(duàn )翻(fān )炒1分钟(zhōng )左右。再加(jiā )入(rù )生抽、老抽、蚝油翻炒均匀,加入少(shǎo )量清水半掩住春笋(sǔn ),盖上锅盖大(dà )火煮开后(hòu )转中火。煮(zhǔ )到水快熬干的时候加入盐,翻炒均匀稍收汁时盖上锅盖焖。
