做法:洗净宰好鲫鱼,洗净淮山和薏米。用清水(shuǐ )把陈皮泡软,拍裂一小(xiǎo )块(kuài )姜(jiāng ),热锅,用姜块在(zài )锅上(shàng )擦一遍,放(fàng )两勺油,待(dài )油六成热下(xià )鱼,煎至微黄。煮沸瓦煲里的清水,放入煎煮好(hǎo )的鲫鱼和其他材(cái )料,武(wǔ )火(huǒ )煮沸,转中小火(huǒ )煲一个半(bàn )小时,下盐调味即可(kě )品尝。
