做法(fǎ ):春笋切成(chéng )片(piàn )后加少许盐捞(lāo )出后用清水浸泡,生姜切片,葱切成段。锅烧热,倒入2勺油,放入生姜、春(chūn )笋、牛肉片、葱段翻炒1分钟左右(yòu )。再(zài )加入生(shēng )抽、老抽、蚝(háo )油翻炒均匀,加(jiā )入少量(liàng )清水(shuǐ )半掩住春(chūn )笋(sǔn ),盖上锅盖大火煮开后转中火。煮到(dào )水快熬干的时候(hòu )加入盐,翻炒均匀(yún )稍收汁时盖上锅盖焖。
