做(zuò )法:洗净宰好鲫鱼,洗净(jìng )淮山和薏(yì )米。用清水(shuǐ )把陈皮(pí )泡软,拍(pāi )裂(liè )一小(xiǎo )块姜,热锅,用姜块在锅上擦一遍,放两勺油,待油六成热下鱼(yú ),煎至微(wēi )黄。煮沸瓦煲(bāo )里的清水(shuǐ ),放入煎煮好的鲫鱼和(hé )其(qí )他材料(liào ),武(wǔ )火煮沸,转中小火煲一个半(bàn )小时,下盐调味即可品尝。
