做法:春笋(sǔn )切(qiē )成片(piàn )后加少(shǎo )许盐捞出后用清水浸泡,生姜切片,葱切成段。锅烧热,倒入(rù )2勺油,放入生姜、春笋、牛(niú )肉片、葱段(duàn )翻炒1分钟左右。再加入生(shēng )抽、老抽(chōu )、蚝油翻炒(chǎo )均(jun1 )匀,加(jiā )入少量清水(shuǐ )半掩住春笋,盖上(shàng )锅(guō )盖大火煮开后转中火(huǒ )。煮到水快熬干的(de )时候加入盐(yán ),翻炒均匀稍收汁时盖上锅盖焖。
