做法:洗(xǐ )净宰好鲫(jì )鱼,洗(xǐ )净淮山和薏(yì )米。用清水把陈(chén )皮泡软,拍裂一小(xiǎo )块姜,热锅,用姜块在锅上擦一遍,放两勺(sháo )油,待油六成热(rè )下鱼,煎(jiān )至微(wēi )黄。煮(zhǔ )沸瓦煲里的(de )清水,放(fàng )入煎(jiān )煮(zhǔ )好的鲫鱼和其他材料,武火煮沸,转中小火煲一个半小时,下盐调味即可品(pǐn )尝。
