做法:洗净宰(zǎi )好鲫鱼,洗净淮山和薏米。用清(qīng )水把陈皮泡软,拍裂一小块(kuài )姜(jiāng ),热锅,用姜块在锅(guō )上擦一遍,放(fàng )两勺油,待油六成热下鱼,煎至微黄(huáng )。煮沸瓦(wǎ )煲里的清水(shuǐ ),放入(rù )煎(jiān )煮好的鲫鱼和其他(tā )材(cái )料(liào ),武火煮沸,转中(zhōng )小火煲一个半小时(shí ),下盐(yán )调味即可品尝。
