做法(fǎ ):春笋切(qiē )成片后加(jiā )少(shǎo )许盐捞出(chū )后(hòu )用(yòng )清水浸泡,生姜切片,葱切成段。锅烧热(rè ),倒入2勺油,放入生姜、春(chūn )笋(sǔn )、牛肉片、葱段翻(fān )炒1分钟(zhōng )左右。再加入生(shēng )抽、老抽、蚝油翻炒均匀,加入少量(liàng )清水半掩住春笋,盖上锅盖大火(huǒ )煮开后转中火。煮到(dào )水快熬干的时候加(jiā )入盐,翻(fān )炒均匀稍收(shōu )汁时盖(gài )上锅盖焖。
