做法:春笋切成片后加少许盐捞(lāo )出后用清水浸泡,生姜(jiāng )切片,葱切成段。锅烧(shāo )热,倒入2勺油,放入(rù )生姜、春笋、牛肉片、葱段翻炒1分钟左右。再加入(rù )生(shēng )抽、老抽、蚝(háo )油翻炒均匀,加入(rù )少量清水(shuǐ )半掩住春笋,盖上锅盖(gài )大火煮开后转中火。煮到水快熬干的时(shí )候加入盐(yán ),翻(fān )炒均匀(yún )稍收汁时(shí )盖上锅盖焖(mèn )。
