做法:春笋切成片(piàn )后加(jiā )少许盐捞出后用(yòng )清(qīng )水浸泡(pào ),生姜切片,葱切成段。锅烧热,倒入2勺(sháo )油(yóu ),放入生(shēng )姜(jiāng )、春笋、牛肉片、葱段翻炒1分钟左右。再加入生(shēng )抽、老抽、蚝油翻炒均匀,加入少(shǎo )量清水半掩住春(chūn )笋(sǔn ),盖上锅盖大火煮开后(hòu )转中火。煮到(dào )水快熬干的时(shí )候加入盐,翻炒均匀(yún )稍收汁时盖上锅(guō )盖(gài )焖。
