做法:洗净宰好(hǎo )鲫鱼,洗净(jìng )淮山(shān )和薏(yì )米。用清水把陈皮泡软,拍裂一(yī )小块姜,热(rè )锅,用(yòng )姜(jiāng )块在锅上擦一(yī )遍,放两勺油,待油六成热下鱼,煎(jiān )至微黄。煮(zhǔ )沸瓦(wǎ )煲里的清水,放入煎煮好(hǎo )的鲫鱼和其他材料(liào ),武火(huǒ )煮沸,转中小火煲一个半小时(shí ),下盐调味即可品尝。
