做法(fǎ ):洗(xǐ )净宰好鲫鱼,洗净淮山和(hé )薏米。用清水把陈皮泡软,拍裂一小块(kuài )姜,热锅,用(yòng )姜块在锅上(shàng )擦一(yī )遍,放两勺油,待(dài )油六成(chéng )热下鱼,煎至微(wēi )黄。煮沸瓦煲里的清水,放入煎煮好的鲫鱼和(hé )其(qí )他(tā )材(cái )料,武火煮沸,转中小(xiǎo )火煲一个半小时,下盐调(diào )味即可(kě )品尝。
