做法(fǎ ):春笋切成片(piàn )后加少许盐捞出后用清水浸泡,生姜切(qiē )片,葱切成段。锅烧(shāo )热,倒(dǎo )入2勺(sháo )油,放入生姜、春(chūn )笋、牛肉片、葱段(duàn )翻炒1分钟左右。再加入生(shēng )抽、老抽、蚝油翻炒均匀,加入少量清(qīng )水(shuǐ )半掩住(zhù )春笋,盖上锅盖大火煮开后转中火。煮到水(shuǐ )快熬(áo )干的时候加入盐,翻炒均(jun1 )匀稍收汁时盖上锅盖(gài )焖(mèn )。
