做法:春笋切成片后加(jiā )少许盐捞出后用清水浸泡,生姜切片,葱切(qiē )成段。锅烧热,倒入2勺油,放入(rù )生姜、春(chūn )笋、牛肉片、葱段翻炒1分钟左右。再加入生抽、老(lǎo )抽、蚝油翻炒均匀,加入(rù )少(shǎo )量清水半掩住春笋,盖上(shàng )锅盖(gài )大火煮开后转中(zhōng )火。煮到水快熬干的时候加入盐,翻炒(chǎo )均(jun1 )匀稍(shāo )收汁时盖(gài )上(shàng )锅盖(gài )焖。
