做法:春笋切(qiē )成片后加少许盐捞出(chū )后用清水浸泡,生姜切片,葱切(qiē )成段。锅烧(shāo )热,倒入2勺(sháo )油,放(fàng )入生姜、春笋、牛肉片、葱段翻炒1分钟左右。再(zài )加入(rù )生抽、老抽、蚝油(yóu )翻炒均匀,加入少(shǎo )量清水半掩住春笋,盖上锅盖大(dà )火煮开后转中火。煮到水快熬(áo )干(gàn )的时(shí )候加入盐,翻炒均匀(yún )稍收(shōu )汁时(shí )盖上(shàng )锅盖焖。
