做法:春笋切成片后加少许盐(yán )捞出后用清水(shuǐ )浸泡,生(shēng )姜切片,葱切(qiē )成段。锅烧热(rè ),倒(dǎo )入2勺油,放入生姜、春笋、牛肉片(piàn )、葱段翻炒1分(fèn )钟左右。再加入生抽、老抽(chōu )、蚝油翻炒均匀,加入少量清水半(bàn )掩住春笋,盖上(shàng )锅盖大火煮开后转中火。煮到(dào )水快(kuài )熬(áo )干的时候加入(rù )盐(yán ),翻炒均匀稍收汁时盖上锅盖焖。
