做法:春(chūn )笋切成片后加少许盐(yán )捞出后用清水浸泡,生姜切片,葱切(qiē )成段。锅烧热,倒入2勺油,放入生(shēng )姜(jiāng )、春笋、牛肉片、葱(cōng )段(duàn )翻炒1分钟(zhōng )左右。再加(jiā )入生抽、老抽、蚝(háo )油翻炒均匀,加入少量(liàng )清水半掩住春笋,盖(gài )上锅盖大火煮(zhǔ )开后转中火(huǒ )。煮到(dào )水快熬干的时候加入盐,翻炒均匀稍收汁时盖(gài )上锅盖(gài )焖。
