做法:洗净宰好鲫鱼,洗净(jìng )淮山和薏米(mǐ )。用清水把(bǎ )陈(chén )皮泡软,拍裂一小块姜,热锅,用姜(jiāng )块在锅(guō )上擦一(yī )遍,放两勺油,待油六成热下鱼,煎至微黄(huáng )。煮沸瓦煲里的清水,放(fàng )入煎(jiān )煮好的鲫(jì )鱼(yú )和(hé )其他材料,武火煮沸,转中小(xiǎo )火煲一(yī )个半小时(shí ),下盐调味(wèi )即可品尝。
