做法:洗净宰好鲫鱼,洗(xǐ )净淮山和(hé )薏(yì )米。用清水把陈(chén )皮泡软,拍裂一小(xiǎo )块姜,热锅,用姜(jiāng )块在锅(guō )上擦一遍,放两勺油,待油(yóu )六成热下鱼(yú ),煎至微黄。煮沸瓦煲里(lǐ )的清水(shuǐ ),放(fàng )入煎(jiān )煮(zhǔ )好的鲫鱼和其他材(cái )料,武火煮沸,转中小火煲一(yī )个半小(xiǎo )时(shí ),下盐调味即可品尝。
