做法:洗净宰好鲫鱼,洗净淮(huái )山和薏米。用清(qīng )水把陈皮泡软,拍裂(liè )一小(xiǎo )块(kuài )姜,热(rè )锅,用姜块在锅上擦(cā )一遍,放两勺(sháo )油,待油六成热下鱼,煎(jiān )至(zhì )微黄。煮(zhǔ )沸瓦煲里(lǐ )的清水,放入煎煮好的鲫鱼和其他材料,武火煮沸(fèi ),转中小(xiǎo )火煲一个(gè )半小(xiǎo )时,下盐调味即可(kě )品尝。
