做法:春笋(sǔn )切成(chéng )片(piàn )后加(jiā )少许盐捞出后用清水浸泡,生姜切片,葱切成段。锅烧热,倒(dǎo )入2勺油,放入生姜、春笋、牛肉片(piàn )、葱段翻炒1分钟左右。再加入生(shēng )抽、老抽、蚝油翻(fān )炒(chǎo )均匀,加入少量清(qīng )水半掩住春笋,盖上锅(guō )盖大火煮(zhǔ )开(kāi )后转中火。煮(zhǔ )到水快熬干(gàn )的时候加入盐,翻炒均匀稍收(shōu )汁时盖上锅盖(gài )焖。
