做法:洗净宰(zǎi )好鲫鱼,洗净淮山和薏米。用清水把陈皮泡(pào )软,拍裂一小块姜,热锅,用姜块在(zài )锅上(shàng )擦一遍,放(fàng )两勺(sháo )油,待油六成热下鱼,煎至微(wēi )黄。煮沸瓦煲里的清水(shuǐ ),放(fàng )入煎煮(zhǔ )好的(de )鲫鱼和(hé )其他(tā )材(cái )料,武火煮沸,转中小火煲一个半小时(shí ),下盐(yán )调味即可品尝。
