做法:春(chūn )笋(sǔn )切成片后加(jiā )少许盐捞出后用清水浸泡,生姜切片(piàn ),葱切成段。锅烧(shāo )热,倒入2勺油,放入生姜、春笋、牛肉片、葱段翻(fān )炒(chǎo )1分(fèn )钟左右。再加入生抽(chōu )、老抽、蚝油翻炒(chǎo )均匀(yún ),加入少量清(qīng )水半掩(yǎn )住春笋(sǔn ),盖上(shàng )锅盖(gài )大(dà )火煮开后转中火。煮到水快熬干的时候加入盐,翻炒均匀稍收(shōu )汁(zhī )时盖上锅盖焖。
