做法:洗净宰好鲫鱼,洗净淮山和(hé )薏米。用清水把陈皮泡软,拍裂(liè )一小块姜,热锅,用姜块(kuài )在锅上擦一(yī )遍(biàn ),放两勺(sháo )油,待油六成热下鱼,煎至(zhì )微黄。煮沸瓦(wǎ )煲里的清(qīng )水,放入(rù )煎煮(zhǔ )好(hǎo )的鲫(jì )鱼和其(qí )他材料,武火(huǒ )煮沸,转中小(xiǎo )火煲一个(gè )半小时,下盐调味即可品尝。
