做(zuò )法:春笋切成(chéng )片后加少(shǎo )许盐捞出后(hòu )用清水浸泡(pào ),生姜(jiāng )切片,葱切成段。锅烧(shāo )热,倒入2勺(sháo )油,放入生(shēng )姜、春笋、牛肉片、葱段翻炒1分钟(zhōng )左(zuǒ )右。再加入生(shēng )抽(chōu )、老抽、蚝油翻炒均匀,加入少量清(qīng )水半掩住春(chūn )笋,盖上(shàng )锅盖大火煮开(kāi )后(hòu )转(zhuǎn )中火。煮到水快熬干的时候加入盐(yán ),翻炒均匀稍收汁时盖上锅盖焖。
