做法:春(chūn )笋切成片后加少许盐捞出后(hòu )用清(qīng )水浸泡(pào ),生(shēng )姜切片(piàn ),葱切成段。锅烧热(rè ),倒(dǎo )入2勺(sháo )油,放入生姜、春笋、牛肉片、葱(cōng )段翻炒1分钟左(zuǒ )右。再(zài )加入生抽、老抽(chōu )、蚝油翻(fān )炒均匀(yún ),加入(rù )少(shǎo )量清水半掩住春笋,盖上锅盖大火煮开后转中火。煮到水快熬干的时候加入盐,翻炒(chǎo )均匀稍收汁时盖上锅盖焖(mèn )。
