做法:洗(xǐ )净宰(zǎi )好鲫(jì )鱼,洗净淮山(shān )和薏(yì )米。用清水(shuǐ )把(bǎ )陈皮泡(pào )软,拍裂一小块(kuài )姜,热锅,用姜块在锅上擦一遍,放两勺油,待油六成热下(xià )鱼(yú ),煎至(zhì )微(wēi )黄。煮沸瓦煲里(lǐ )的清水,放入煎(jiān )煮好的鲫鱼(yú )和其他材料,武火煮沸,转中小火煲(bāo )一个半小(xiǎo )时,下盐调味即可品尝。
