做法:春笋切成片(piàn )后加少许盐捞出后用(yòng )清水浸泡,生姜切片,葱切成段。锅烧热,倒入2勺油,放入生姜、春(chūn )笋、牛(niú )肉片、葱段(duàn )翻(fān )炒1分钟左右(yòu )。再加入生抽、老抽、蚝(háo )油翻(fān )炒(chǎo )均匀,加入少量清水半掩(yǎn )住春(chūn )笋,盖上(shàng )锅盖(gài )大火(huǒ )煮开后(hòu )转中火。煮到(dào )水快熬干的时候加入盐,翻炒均匀稍收汁(zhī )时盖上(shàng )锅盖焖。
