做法:洗净宰好鲫鱼,洗(xǐ )净淮山和(hé )薏米(mǐ )。用清水把陈皮泡软,拍(pāi )裂(liè )一小(xiǎo )块姜,热锅,用姜块在锅上擦一遍,放两勺油,待油六成热(rè )下鱼,煎(jiān )至微黄(huáng )。煮沸瓦(wǎ )煲里(lǐ )的清水,放入煎煮(zhǔ )好(hǎo )的鲫鱼和其他材料,武火煮沸,转中小火煲一个半小(xiǎo )时,下盐调味即(jí )可(kě )品尝。
