做法:洗净宰好鲫鱼,洗(xǐ )净淮山和薏米。用(yòng )清水(shuǐ )把陈皮泡软,拍裂一小块姜,热锅,用姜块在(zài )锅上擦一遍(biàn ),放两勺油,待油六成(chéng )热(rè )下鱼(yú ),煎至(zhì )微黄。煮沸瓦煲里(lǐ )的清水,放入煎煮好的鲫鱼和其他材料(liào ),武火煮沸,转中(zhōng )小火煲一个半小(xiǎo )时(shí ),下盐调味即可品尝(cháng )。
